“Special Coffee”  is probably one of the most requested beverages from my husband. He loves this way of preparing it. I typically reserve making it this way for the weekends, when time will allow and we are not all in a rush, running off in different directions!

“Special Coffee”  is probably one of the most requested beverages from my husband. He loves this way of preparing it. I typically reserve making it this way for the weekends, when time will allow and we are not all in a rush, running off in different directions! It’s not that it takes that much more time, but it is a little more than just pouring the coffee and running out the door. The coffee is so very decadent when it’s prepared this way. I think it’s better than any coffee shop, but of course, that’s my opinion.

Here’s how to make it.

Ingredients:

  • 6 cups of your favorite brewed coffee, hot
  • ½ cup heavy whipping cream
  • 2-3 tablespoons of butter
  • 2-3 tablespoons MCT oil
  • ¼ tsp. Cinnamon
  • Large pinch sea salt
  • ½ tsp. Vanilla extract
  • 1-2 Tbsp. cacao powder (optional)
  • 1 scoop of collagen powder (optional)

Place all ingredients in a blender and blend on high for approximately 30 seconds. Serve immediately.

Notes & Variations:

Add the cacao for a hot mocha

Add peppermint extract along with cacao for a peppermint mocha

You can also save any leftovers, refrigerate and pour over ice for an iced coffee. It may be a good idea to quickly blend again in the blender. 

You’ll notice once again that I’ve added MCT oil and collagen powder. Along with the cream and butter, MCT oil is a great flavorless way to add in some fats if you are following a LCHF/Keto way of eating. If you are omitting dairy (butter and cream) you can still get your fats in. The collagen gives a protein boost, and that is also flavorless and doesn’t alter the taste.  Oftentimes, this sustains my husband throughout the morning since he usually doesn’t eat his first meal of the day until mid to late afternoon.

Chicken Bone Broth

Soups are a staple in our house. In the cooler months of the fall and winter, I make at least 2 soups a week. Fortunately for me, my family loves soup.
