Do you have a go-to soup when the weather is cold and miserable? A soup that is a comfort food? The type of day where you might be snowed in and not want to venture out for the day? This might be my husband’s all time favorite soup. I think. Well, it’s definitely in the top 5!

Sausage Kale Soup

This soup is easy, hearty and perfect for those colder days and nights.  A family favorite and a staple in our house. During the fall and winter I probably make this once a week.  It’s an easy one pot soup that I feel gets better on the second day. Often I make a double batch to carry us through  a couple of busy weeknight dinners.

Ingredients:

  • 1 pound sweet italian sausage, ground or remove from casings
  • 1 pound hot italian sausage, ground or remove from casings
  • 1 medium onion, chopped
  • 1-2 cloves garlic, chopped fine
  • Approximately 2 quarts of chicken broth, preferably homemade (see my bone broth recipe)
  • 8-10 cups chopped kale, thick stems removed
  • About ½ to 1 cup cream
  • Pinch red pepper flakes (optional)
  • Salt and pepper to taste

In the bottom of a dutch oven or stock pot, give a quick drizzle of olive oil or about a tablespoon of lard and saute the chopped onion until translucent, about 5 minutes. Add chopped garlic and stir until fragrant, being careful not to burn. Add the italian sausage and brown until thoroughly cooked through, breaking up the meat as you go. Immediately add broth. Once the broth is barely simmering, add the chopped kale, cover and let simmer on low for about 10 minutes. When this step is complete, Turn off the heat and stir in approximately ¾ cup of heavy cream.

Serve immediately. Enjoy!

Baby kale can be thrown into a smoothie without the taste being too strong but mature kale can be strong tasting especially for younger kids or if you’re just not used to it. The nutrients in kale are fantastic. One way to get our young friends to try it is to make kale chips. I make them a few times a week in the summer when the kale is growing in abundance and the kids do enjoy them, as do the adults.

Simple Unsweetened Applesauce

Admittedly, I will make big batches to try to cover a few meals during a busy week and for the kids to take soup to school (when they were IN school!) for lunch. All great soups start with a homemade bone broth. It really is fairly simple, economical and you can accomplish it quite easily and it’s sooo good for you!
